Boneless Drunken Chicken Rolls with Wolfberries

Step 1
On a chopping board, remove the chicken meat from the bone with a small knife

Step 2
Lay the chicken skin-down and season with some salt. Allow marinating for 10 minutes

Step 3
In a wok, combine water, green onions, ginger, star anise and sugar. Boil for 10 minutes

Step 4
Then transfer to a bowl, allow cooling. After cooling, add the Chinese cooking wine and sweet soy sauce. Set aside

Next, prepare the chicken roll. With 2 pieces of aluminum foil, place a piece of chicken thigh skin-down on each of them

Then roll them up and twist both ends tightly like a candy bar

Step 7
Steam the chicken rolls over water on high heat for 12 minutes

Remove the chicken rolls and allow to cool for 5 minutes. Unwrap the tin foil and slice the chicken rolls into 2-cm thick pieces

Soak them in the drunken broth for at least 3 hours (or overnight for better taste)

Serve at room temperature or cold
