Warming Corn Chowder

Step by Step Instructions

Step 1
Wash and peel all the vegetables. Cut the corn kernels into a bowl. Put the cobs in a pot with the vegetable or chicken broth and the water.

Step 2
Cover and simmer for at least 10 minutes.

Step 3
Remove the cobs and reserve the corncobs broth.

Step 4
In the same pot, add some olive oil on medium heat. Sauté diced bacon over medium heat.

Step 5
Add onions and carrots. Cook for 3-5 minutes. Add in potatoes and chopped garlic. Stir for 2 minutes.

Step 6
Add in flour and stir and bay leaves to mix well.

Step 7
Strain in the corncobs broth into the potato mixture. Reduce to medium low heat and cover to cook 15 minutes.

Step 8
Add corn kernels, increase to medium heat and cook 5 minutes.

Step 9
Add milk. Season with salt and black pepper.

Step 10
Stir in chopped parsley and serve.
