Oatmeal Chocolate Chips and Ginger Cookies

Step by Step Instructions

Step 1
Preheat oven to 180°C. Line baking trays with wax paper. In a big bowl, mix together soft butter and sugar until light and fluffy.

Step 2
Add egg and vanilla extract to butter mixture and beat for 1 minute, until well mixed.

Step 3
In another bowl, mix together flour, baking soda, cinnamon, ginger and salt. Stir to combine.

Step 4
Add all the dry ingredients to the butter mixture all at once. Mix with a spatula until well combined. Add in rolled oats, candied ginger and chocolate chips and mix well.

Step 5
Scoop cookie dough onto lined baking trays, leaving around 8cm space in between each spoonful of cookie dough.

Step 6
Bake cookies for 12-14 minutes until golden brown. Place on wire rack to cool.

Ready to serve
