Double-boiled Egg White with Fungus in Kopyor Coconut

Step by Step Instructions

Step 1
Cut the top of the kopyor coconut. Remove the bottom of the kopyor coconut

Step 2
Reserve 200 mL coconut juice for further use

Step 3
Place the kopyor coconut in the bowl and set aside

Step 4
Soak the fungus in water until soft. Drain it and cut into pieces

Step 5
Whisk together the coconut juice and egg white

Step 6
In a pot, combine the milk and rock sugar and bring it to simmer. Turn off the heat when the rock sugar melted completely

Gradually add the milk into the egg white mixture

Step 8
Run the mixture through the sieve and place in a measuring cup

Place the fungus inside the coconut shell

Step 10
Pour the milk mixture about ¾ full

Cover with foil and double boil it over high heat for 45 minutes

Ready to serve
