Sour and Spicy Cold Noodles in Thai Style

In hot weather, nothing is better than enjoying something sour and spicy! Cold noodles served with homemade Thai sauce are just too refreshing!

Step by Step Instructions

Step 1
Julienne the Japanese cucumber and red onion. Slice the tomato. Chop the basil leaves, garlic and red bird chili.

Step 2
Bring a pot of water to boil. Add noodles and cook until al dente. Transfer to ice water and let cool. Drain and set aside.

Step 3
In the same pot of water, add shrimps and cook until done. Transfer to ice water, let cool and drain.

Step 4
Prepare the sauce. Mix together the fish sauce, lemon juice, light soy sauce, sugar, garlic, red bird chili, basil leaves and water.

Step 5
Pour into the noodles and mix well.

Step 6
Layer tomato, red onion, Japanese cucumber and shrimps over the noodles. Ready to serve.
