Japanese Pork and Tofu Stew

Cooking pork stew with daikon and baby cabbage is particularly fresh and delightful. Bonito stock helps to further bring out the sweetness of vegetables and pork.

Step by Step Instructions

Step 1
Slice 5 shitake mushrooms and set aside.Cut the remaining shitake mushrooms with knife into flower shape.

Step 2
Cut 3 pieces of daikon and carrot with flower-shaped cookie cutter.

Step 3
In a pot, sprinkle salt in the bottom. Layer baby cabbages around the pot.

Step 4
Layer the ingredients in the following order: Shitake mushrooms, daikon, leek, carrot, 4/5 soft tofu and pork.

Step 5
Place the remaining tofu, flower-shaped daikon, carrot and shitake mushrooms. Add bonito stock.

Step 6
Reduce to low heat. Cover the lid and cook for 30-40 minutes.

Step 7
Add Japanese soy sauce, mirin and cooking wine. Increase to medium heat and bring to a simmer. Sprinkle with green onion. Ready to serve.
