Salmon and Chicken Rice Pizza with Spicy Mayo Sauce

The leftover rice is usually used to make fried rice. Have you ever tried to make rice pizza? The baked rice crust is crispy and with Japanese sauce, the taste is rich.

Step by Step Instructions

Step 1
Finely chop the onion

Step 2
Mix together the Japanese mayonnaise and sriracha

Step 3
Cut the chicken thigh meat into small pieces. Marinate with Japanese soy sauce and mirin for 15 minutes

Step 4
In a pan, add some oil on a medium high heat. Sauté the onion until fragrant, add the chicken and cook until golden brown. Set aside

Step 5
In a bowl, mix together the cooked rice, hondashi and furikake

Step 6
In a baking pan, brush some oil over and spread the rice mixture about 2cm thick in round shape. (make sure press it tight to prevent loosen when cutting)

Step 7
Spread the spicy mayo over the rice and add the salmon flake, chicken mixture evenly

Step 8
Sprinkle the parmesan cheese and bake it until golden brown and the crispy at the bottom

Step 9
Remove from the oven. Sprinkle with shredded nori and ready to serve
