French Oyster Bisque

Nothing is warmer than having hot soup in the cold weather, not to mention it is made by your beloved! This French Oyster Bisque is a comforting and delicious winter soup you can make in this Valentine’s Day.

Step by Step Instructions

Step 1
Rinse and drain the oyster. Finely dice the onion and shallot.

Step 2
In a pot, bring the water to boil and blanch the oyster for 1-2 minutes. Reserve 4 pieces for later use.

Step 3
In another pot, melt the butter on a medium heat. Sauté the onion, shallot, oyster, thyme until fragrant.

Step 4
Add the white wine, flour and stir well.

Step 5
Add the chicken broth and bring it to simmer on medium heat for 5 minutes.

Step 6
Discard the thyme and use the hand blender and blend until smooth.

Step 7
Add the whipping cream, oyster, salt and white pepper.

Step 8
Transfer to the dish, drizzle with whipping cream. Garnish with fresh thyme and ready to serve.
