Shrimp and Yogurt Salad with Baguette

With fresh shrimp, Greek yogurt and avocado, you can make a healthy and delicious salad. Serve it with the crispy baguette!

Step 1
Slice the baguette. Clean and devein the shrimp. Cook the shrimp in a pot of water. Set aside.

Step 2
Peel and dice the apple. Dice the red onion. Add 1 tbsp lemon juice separate to the apple and red onion. Rinse with cold water. Drain and set aside. Slice the celery and set aside.

Step 3
Prepare the salad dressing. Peel the avocado and remove the seed. Mash the pulp. Add the Greek yogurt, mayonnaise, apple, red onion, celery, shrimp, black pepper, salt and mix well. Refrigerate and set aside.

Step 4
In a pan, add some olive oil. Sear the baguette until golden brown on both sides. Set aside.

Step 5
Place the shrimp and yogurt salad, parsley and paprika on the baguette as garnish. Ready to serve.
