Recipe Details

Step by Step Instructions

Step 1
Preheat the oven to 200 degree

Step 2
Add fine sugar into egg white. Beat to stiff peak.

Step 3
Add icing sugar, cake flour and almond powder into mixture in step (2). Stir.

Line a baking pan with parchment. Put the mixture on the pan and smooth the top. Bake for about 8 minutes until the surface is golden brown.

Step 5
Invert the cake and let it cool.

Step 6
Add half amount of whipping cream into a pot. Boil over low-heat.

Step 7
Add boiled whipping cream in chocolate. Stir well until chocolate completely melt

Step 8
Add remaining whipping cream in, let it cool

Step 9
Beat butter with sugar until the mixture is pale

Step 10
Add egg white slowly until it mixes completely with creamed butter

Step 11
Pour coffee slowly and mix the buttercream well. Ready for steps later.

Step 12
Boil water with sugar in a pot over medium-heat.Remove from heat after boiling. Let it cool

Pour coffee liqueur into the syrup.

Step 14
Cut the cool sponge cake into 3-4 same sized rectangular cakes. Brush coffee syrup on each cake.

Spread the buttercream on the sponge cake, as thick as the cake, put the cake in the fridge to freeze it until the buttercream is completely frozen.

Spread the chocolate glaze, as thick as the previous two layer, chill it for 5 minutes, take the cake out and cover it with another layer of sponge cake. Repeat step 6 until all sponge cake is used u
