Step 1
Soak the yellow fungus overnight until soft. Set aside.

Step 2
Soak and rinse the Chinese yam, red dates, lotus seeds, dried maitake mushrooms and dried scallops. Set aside.

Step 3
In a pot, bring some water to boil. Blanch pork shanks for 3 minutes and drain.

Step 4
In a pot, add yellow fungus, maitake mushrooms, pork shanks, Chinese yam, red dates, lotus seeds, dried scallops and some water.

Step 5
Cover the lid and cook on medium heat for 2 hours.

Step 6
Season with some salt. Ready to serve.
