Known as the Yangzhou Fried Rice, ironically it was originated from Guangzhou during the Qing Dynasty. It was said that once there was a restaurant call “Ju Chun Yuan” made a dish called “Yangzhou rice crust” with shrimp, BBQ pork and sea cucumber and it was popular. It was not long after when other restaurants started improvising on this dish; by replacing rice crust with rice. The newly created dish became known as the Yangzhou fried rice ever since.
