Winter Melon with Fried Tofu and Fermented Red Beancurd

Step 1
Soak the vermicelli in warm water to soft

Remove the skin and seeds of the winter melon and cut it into medium size

Slice the ginger and red pepper. Cut the fried tofu in halves

In the pot, bring the water to boil and blanch the fried tofu for 30 seconds. Set aside

Prepare the clay pot, heat the oil and sauté the ginger until fragrant

add the red beancurd, deglaze with chinese cook wine and chicken broth, stir and mix together

Add the fried tofu, winter melon

Step 8
cover with the lid and cook for 15-20 minutes

When the sauce is reduced

Add the vermicelli, slightly stir until all the ingredients are coated with the sauce
