Winter melon & Chinese Violet Soup with Brown Rice

Shrimp Marinade
Step by Step Instructions

Step 1
Rinse and pat dry the shrimp. Marinate for 15 minutes.

Step 2
Rinse and soak the Chinese violet for 10 minutes. Drain then set aside.

Step 3
Peel and dice the winter melon and angled luffa. Halve the straw mushrooms.

Step 4
In a pot, bring Jinhua ham broth and water to boil, add winter melon and angled luffa and cook for 25 minutes over medium heat.

Step 5
Add straw mushrooms, shrimp and Chinese violet to the pot. Cook for another 5 minutes.

Step 6
Place brown rice in a bowl, add soup and ingredients just before serving. You may sprinkle some fried garlic on top to enhance the flavour according to your own preference.
