Winter Melon and Semen Coicis with Carp Soup

Winter melon contains lots of water and rich in vitamin C, it can gives moist to skin and also increase the elasticity of the skin. Semen coicis also contains protein and amino which has strong whitening effect. Use carp to make a soup which cannot be missing.

Step by Step Instructions

Step 1
Clean the carp and set aside. Remove the skin and cut the winter melon into pieces. Soak the semen coicis in warm water for an hour. Rinse and drain the wolfberries.

Step 2
Peel and slice the ginger. Cut the leeks into section. Mince the garlic and chop the cilantro.

Step 3
In a shallow pan, sauté the garlic, ginger and leeks until fragrant.

Step 4
Add the carp and sear until golden brown on both sides.

Step 5
Add enough water, semen coicis and bring it to boil over high heat. Reduce the heat to low, cover the lid and cook it for 40 minutes.

Step 6
Add the winter melon and cook for 20 minutes. Add the wolfberries and cook for another 5 minutes.

Step 7
Season with salt, drizzle with sesame oil, sprinkle with chopped cilantro and ready to serve.
