White Fungus Apple and Pork Congee

Step 1
Soak the white fungus until soft. Seed and slice the apple.

Step 2
Rinse the rice and drain. Marinate with salt and oil for 30 minutes.

Step 3
Bring a pot of water to boil and blanch the lean pork for 5 minutes. Drain and set aside.

Step 4
In another pot, cook rice, lean pork and water on medium high heat and bring it to boil. Cover the lid. Reduce to medium low heat and cook for 30 minutes.

Step 5
Open the lid. Take out the lean pork, slice and put it back.

Step 6
Add apple, white fungus and cook for 15 minutes. Stir well and ready to serve.
