Water Chestnut Sweet Soup with Lotus Seed and Mung Bean

Mung beans are good for cooling body heat. Cook together with sweet water chestnut and lily bulbs! This sweet soup is easy yet tempting!

Step 1
Soak, rinse and drain the split mung beans, lotus seeds and dried lily bulbs. Dice the water chestnuts. Set aside.

Step 2
In a pot of water, add split green beans, lotus seeds, dried lily bulbs, and water chestnuts. Bring to boil on medium heat. Reduce to medium low heat and cook for 30 minutes.

Step 3
Add rock sugar and cook until melted.

Step 4
Mix water chestnut flour and 1 tbsp water. Add in the sweet soup, mix well and cook until slightly thickened. Ready to serve.
