Walnut and Asparagus Risotto
Recipe Details
Walnut known as good for kidney, but not necessarily only for soup. Use it to make the risotto, match it with the greenish and crunchy asparagus. Make a refresh dinner, it is not even tasty as well as can absorb the nutrients of the walnuts.

Step by Step Instructions

Step 1
Mince the garlic. Chop the shallot. Clean and trim the asparagus and cut into section. Chop the walnut.

Step 2
In a pot of water, add some salt and blanch the asparagus, drain and set aside.

Step 3
In a pan, toast the walnut until fragrant and set aside.

Step 4
In a pot, add butter and sauté the garlic and shallot until fragrant, add the Arborio rice and white wine.

Step 5
Add the vegetable broth several times, keep stir until the rice has absorb the broth. Add the asparagus, walnut and stir well. Season with salt and black pepper.

Step 6
Transfer to the plate, sprinkle with parmesan cheese and serve.
