Step by Step Instructions

Step 1
Braised Tofu with Roast Pork:Cut tofu into slices, pan fry over medium heat until golden brown. Transfer to plate and set aside. In a small bowl, mix together the sauce ingredients. In pot with some oil, sauté the garlic, red onion, ginger slices, red chili and mushroom over medium heat. Add roasted port and toss well. Add in the sauce and bring to boil. Return tofu into the pot and cook for another 2 minutes. Stir in corn starch sauce thickener and sprinkle some spring onion. Serve.

Step 2
Hot & Sour Soup with Tofu:Cut tofu into dices.In a small bowl, mix together the soup base ingredients.Heat the pot with some oil, sauté the black fungus, shiitake mushroom, carrot and enoki mushroom over medium heat.Pour in chicken stock and water and bring to boil in high heat. Add tofu and corn starch sauce thickener, cook until the soup is thickened. Off the heat.Sprinkle some chopped coriander. Serve.

Step 3
Fish Paste Tofu Vegetable Stew:Cut tofu into thick slices. Scoop a shallow spoonful of tofu from the centre, pat on some corn starch and smear the fish paste onto the tofu slices.In a pot with some oil, stir fry the ginger slices, dried shrimp, shiitake mushroom, broccoli and carrot over medium heat. Pour in the fish stock and bring to boil.Add the fish paste tofu slices into the pot, cook for another 4 minutes with the lid on. Serve.

Step 4
Korean Seafood Tofu Stew:Cut tofu into dices.In a small bowl, mix together the soup base ingredients.Heat the pot with some oil, add shrimp and pan fry over medium heat. Pour in chicken stock and water and bring to boil.Stir in the soup base ingredients, add kimchi and clams.Add tofu and Chinese chives, cook for another 2 minutes. Serve.
