Step 1
In the pot, bring the water to boil and blanch the shrimp for about one minute

transfer to ice bath, drain. Then cut into half

In another pot, bring the water to boil and cook the vermicelli until soft about 8 minutes

rinse off with cold water, set aside

Step 5
For the sauce, in medium high heat boil water, add rock sugar and sugar, stir with a wooden spoon until melted, let it cool and reserve for later use.

Minced the garlic and finely chopped the red chili

Step 7
Combine all the sauce ingredients together with the sugar syrup, use for dipping sauce

Place the rice paper into warm water for about 10 seconds then place on the cutting board

Step 9
Layer shrimp, vermicelli, cucumber, cabbage, mango and carrot in the middle of the rice paper
