Vietnamese Lemongrass Chicken with Rice Vermicelli

Step by Step Instructions

Step 1
Mince the lemongrass

Step 2
Marinate the chicken with minced lemongrass, ginger juice, fish sauce minced garlic and sugar for 20 minutes

To prepare the dipping sauce. Mince the garlic, shallot and red bird chili. Juice the lime

Step 4
Add fish sauce, boiled cold water, brown sugar and sweet chili sauce. Mix well and set aside

Step 5
In a pot, bring the water to boil and cook the Chewy Instant Rice Vermicelli Original Flavor until soft, drain and set aside

Step 6
In a pan, add some oil on a medium high heat and cook the chicken until golden brown on both sides and fully cook inside

Step 7
Cut the chicken into slice

Step 8
Transfer the Chewy Instant Rice Vermicelli to the plate. Place the chicken, iceberg lettuce, shredded cucumber and carrot. Sprinkle some fried shallot on top
