Vietnamese Grapefruit and Shrimp Salad

This Vietnamese style salad is perfect for a hot summer day. The lime-based dressing is very refreshing. The main ingredients that give this salad a Southeast Asia taste are the fish sauce & fried shallots.

Step by Step Instructions

Step 1
First, boil the shrimps (no need to marinade), drain, cut in halves; set aside.

Step 2
Second, we wash and prepare the vegetables. Today I used cilantro, although I see some recipes using Vietnamese mint leaves (I could not find them at the grocery store today), and green onions. Wash and cut into 1-2 inches length pieces. Cut the carrots into thin pieces. They give the salad a nice crunch in every bite.

Step 3
Now, lets take care of the grapefruits. First, peel off the skin.

Step 4
Remove the segments from the membranes. This will take a little bit of time. Don't rush or you will end up squeezing the juice out of the fruit.

Step 5
Finally, lets make the dressing: Finely chop the garlic and shallots.

Step 6
In a cup, mix together all of the ingredients and give it a good stir. Make sure the sugar is thoroughly melted in the dressing. Give it a taste. I find the 3:4 sugar: fish sauce ratio works pretty well, but if you don't like your dressing so sweet (or the other way around) just add a little bit more fish sauce.

Step 7
Now we have everything ready! Just give everything a little toss with the dressing in a salad bowl.

Step 8
Serve with a generous portion of fried shallots.
