Veggie Lotus Root Sandwich

Traditional lotus root Patties is a common homemade dish, but it is too oily for people in diet. Why don’t we just replace the fat meat by vegetables? With the dietary fiber from lotus root, this healthy dish may help to keep fit!

Step by Step Instructions

Step 1
Crop the spring onion. Clean lotus root and slice it into 5cm-thick, cut it in the middle part but don’t cut it in the end.

Step 2
Clean Chinese yam, carrot and potatoes, peel and cook them.

Step 3
Put the cooked potatoes, carrot and Chinese yam into a big bowl, smash them.

Step 4
Add salt, white pepper, chili and Chinese pepper powder, mix them well.

Step 5
Stuff the mixture in between the lotus root.

Step 6
Add salt, white pepper, chili and Chinese pepper powder, mix them well.

Step 7
Blend flour and salt with eggs. Add some water to make the paste.Add spiced salt in the paste and mix it well.

Step 8
Glue the lotus root with paste

Step 9
Deep-fry until it turns golden brown.

Step 10
Use kitchen paper to absorb the extra oil. Add some green onion on top and it is ready to serve.
