Vegetarian Tom Yum Soup

Step by Step Instructions

Step 1
Halves cherry tomatoes and baby corns, slice oyster mushroom and Galangal.

Step 2
Trimmed the base of lemongrass stalks and peel off the outer layer, pound them using the back of your knife and slice them.

Step 3
Slice Kaffir Lime Leaves finely. Lightly pound chilies.

Step 4
Boil a pot of water, add in Lemongrass, Thai chili, oyster mushrooms, Galangal and baby corn and cook for 5 mins.

Step 5
Add soy sauce and chili sauce to taste.

Step 6
Add in Kaffir Lime Leaves, cherry tomatoes and cook for another 2-3 mins.

Step 7
Add Coconut milk and stir well, lastly add fresh lime juice, coriander and serve immediately.
