This is the dish from Northeast China. People always pick the top 3 of seasonal vegetables: potatoes, eggplants and Green pepper. It appears to be green and smell good. And for sure, it is rich in nutrients and unforgettable.

Step by Step Instructions

Step 1
Cut eggplants to pieces, green pepper to slices. Clean and peel potato then cut it to slices. Mash the garlic.

Step 2
Heat the pan with oil. Fry eggplant, potato and green pepper one by one. Take out and sieve from oil.

Step 3
Keep some oil in pan and put in garlic. Then put back the eggplant, potato and green pepper.

Step 4
Add oyster sauce, salt, sugar and soy sauce and stir-fry.
