Step 1
Remove the seed and shred the green bell pepper. Dice tomato, beat eggs and chop dried red chilli.

Step 2
Add olive oil to a hot pan, sauté dried red chilli, add shredded green pepper, cook until soften at medium heat. (Around 3 minutes)

Step 3
Add tomato dice and thyme, stew for 2to 3minutes, until the sauce thickened.

Step 4
Add eggs and stir 4-5 times, add some salt and put on a plate. Can serve with pita.
