Tomato stuffed with Pesto Rice

Step by Step Instructions

Step 1
Clean and cut the top of the toma

Use the spoon to scoop out the seeds and discard

Finely chop the onion

Step 4
In a pan, add some oil on a high heat. Sauté the onion until fragrant

Add the rice and cook for 2-3 minutes

Step 6
Add about 1/3 of the chicken broth and cook the rice until the rice has absorb all the liquid

Repeat the step 3 times until the rice is fully cooked

Step 8
Turn off the heat and add the pesto, pine nuts and mix together

Scoop the rice mixture in the tomatoes and transfer to the baking tray

Sprinkle the parmesan cheese and bread crumb over

Preheat the oven to 180°C and bake it for 10-12 minutes until it is golden brown
