Tomato Noodle Soup with Cheese & Chicken Thigh

Step 1
Slice the shallot

Minced the garlic

Step 3
In a large pot, heat up some oil on high heat. Add garlic and shallot to sauté until aromatic, about 30 seconds. Add tomato paste to sauté for 1 minute

Add crushed tomatoes, chicken broth and water, bring to boil. Reduce to medium heat to simmer for 15 minutes. Season with salt and ground black pepper. Set aside

Step 5
season the chicken with soy sauce, white pepper and Chinese cooking wine

Step 6
Add chicken thigh to pan fry, about 3-4 minutes on each side until both sides are nicely golden and fully cooked

Step 7
Cut the chicken into pieces

Step 8
Place the cooked noodles inside a large bowl

Step 9
Top with chicken thigh. Then pour the hot tomato soup

Step 10
Sprinkle with green onion and cheese, serve
