It is very appetizing to fry rice with tom yum paste, lemongrass and lime juice. Easy and convenient to make within a pan!

Step 1
Marinate the shrimps with salt, white pepper and sugar for 10 minutes.

Step 2
Dice the shallot and lemongrass. Cut the cherry tomatoes into 4. Set aside.

Step 3
In a pan, add some oil on a medium heat. Sauté the shallot until fragrant. Add the shrimps and stir fry until half cooked.

Step 4
Add the rice and cook until the rice is separated. Add the egg wash and stir until the rice is coated with the egg. Add tom yum paste, lemongrass and stir well.

Step 5
Add cherry tomatoes, fish sauce, sugar and quick stir. Remove from heat and drizzle with lime juice to taste. Ready to serve.
