Soak the dried shiitake mushrooms until soft and remove the stems. Drain completely and thinly chop. Peel and chop the carrot. Soak the black fungus until soft and thinly chop. In a pan, add some oil on medium heat. Add dried shiitake mushrooms and sauté until fragrant. Add black fungus, carrot and sauté until fragrant. Let cool and set aside.
