Step 1
Slice the leeks and ginger

Step 2
Cut the tofu in 1cm thick

Step 3
Blanch the edamame for 1-2 minutes

Step 4
Then add the shrimp and blanch for -2 minutes, drain and set aside

Step 5
In another pot, bring the water to boil, add the tofu and blanch for 1-2 minutes, drain and let cool

Add oil on high heat, sauté the ginger and leek until fragrant

Step 7
Add Chinese cooking wine and tofu to stir. Add water, salt and sugar to mix well

Bring the sauce to boil then add the edamame and shrimp

Step 9
Cover the lid and cook it for 2-3 minutes, then add the corn starch water and cook until the sauce is thicken

Ready to serve
