Toasted Tomato Basil Soup

Made with fresh tomato and basil, this homemade tomato soup is just perfect to kick start a meal!

Step 1
Pre-heat the oven to 200C. Halve the tomato and place on a big bowl. Add in the olive oil, salt and pepper and toss thoroughly. Place on the baking tray with cutting side up, add the garlic clove with skin and bake for 30 minutes.

Step 2
Heat the frying pan over medium low heat. Add in the butter, diced onion and cook until golden brown. Add the tomato paste and balsamic vinegar with quick stir.

Step 3
Peel the toasted garlic and place into a big pot with tomato, onion, basil, chicken stock and simmer for 30 minutes with low heat. Stir in the parmesan cheese then blend with a hand blender until smooth. You may adjust the thickness of soup by adding in more water.
