Thai Whole Pineapple and Prawn Fried Rice

Step by Step Instructions

Step 1
Put on Marigold Futura Gloves. Peel and devein the prawns. Remove the tail and rinse.

Step 2
Marinate with Chinese cooking wine, salt, sugar and ground white pepper for 15 minutes.

Step 3
Put on Marigold Futura Gloves. Cut the pineapple into halves. Take out the flesh carefully and keep the shell.

Step 4
Dice the flesh and set aside.

Step 5
In a pan, add some oil on medium heat. Sauté the shallot until fragrant.

Step 6
Add the prawns and stir fry until half-cooked.

Step 7
Add the rice and cook until separated.

Step 8
Add the egg wash and stir until the rice is coated with the egg.

Step 9
Add red bell pepper, pineapple, cashews and green onion. Stir well.

Step 10
Add Turmeric powder, salt and stir well.

Step 11
Stuff the pineapple shell with fried rice.

Step 12
Sprinkle with the pork floss and green onion.
