Thai Scallops and Papaya Salad

Step 1
Peel and shred the green papaya

Step 2
Place in ice water to keep crunchy

Step 3
Cut the string bean in section

Step 4
Cut the tomatoes in halves

Step 5
In a pot, bring the water to boil and cook the scallop for 1 minute

Step 6
Transfer to cold water to let cool, drain and set aside

Step 7
In a grinder, combine the garlic, red bird chili, peanuts and grind into small pieces

Step 8
Add the fish sauce, lime juice and the coconut sugar, grind it until all the ingredients together

Step 9
Drain the papaya and place in a large mixing bowl. Add the scallop, tomatoes, string bean, peanuts and the sauce mixture

Toss well and ready to serve
