Thai Green Curry Shrimp with Linguine

Step 1
Clean and devein the shrimp. Pat dry and set aside.

Step 2
Cut the Thai eggplant into wedges.

Step 3
In a pot, bring the water to boil and add some salt. Cook the San Remo Linguine until al dente.

Step 4
Mix together the all-purpose flour, salt and white pepper.

Step 5
Dredge the shrimps with the flour mixture.

Step 6
In a pan, add some oil on a medium high heat. Sear the shrimps until golden brown and set aside.

Step 7
In the same pan, add some oil and sauté the garlic, shallot and red bird chili until fragrant.

Add the green curry and cook for a minute. Add the Thai eggplant and stir well.

Add the coconut milk, lime juice, palm sugar and fish sauce. Reduce the heat to medium and bring it to simmer.

Step 10
Add the shrimps, San Remo Linguine, and Thai basil. Toss well and transfer to the plate.

Sprinkle with cilantro and peanut.
