Thai Fried Rice with Shrimp Paste
Recipe Details
Using shrimp paste to fry rice gives a strong fragrance to the dish. You may add Thai sausage in the rice to give an extra sweetness.

Step by Step Instructions

Step 1
Chop the shallots. Slice the cucumber, Thai sausage and beat the eggs.

Step 2
Marinate the shrimps with salt, white pepper and sugar for 10 minutes.

Step 3
In a pan, add some oil on medium heat. Add shallots and sauté until fragrant. Add Thai sausage, shrimps and stir-fry until half-cooked.

Step 4
Add the rice and cook until the rice is separated. Add the egg wash and stir until the rice is coated with the egg.

Step 5
Mix the shrimp paste with some water. Stir-fry together with the rice. Add fish sauce, sugar and mix well.

Step 6
Transfer to a plate. Layer pork floss and cucumber on top. Ready to serve.
