Thai Cold-dressed Squid Salad

This is an epic dish. Cold-dressed salad in Thai style is different to Chinese style. The Thai one is lighter in taste, more refreshing, and the chefs usually includes fruits as ingredients and lime juice as sauce. Sour-sweet tomatoes plus chewy squid. Yummy!

Step by Step Instructions

Step 1
Extract juice from limes.

Step 2
Cut onions to shreds, green onions and tomatoes to pieces

Step 3
Clean squid, cut it to pieces and carve its surface with crossed parallel sloping lines.

Step 4
Add water, cooking wine and ginger into pot and heat. Then add squid. Take them out when they start to roll up. Put squid pieces in cold water for cooling down and take out again.

Step 5
Mix red chilies fragments, garlic fragments, sugar, fish sauce, lime juice and chicken extract. This will be the salad sauce.

Step 6
Put squid on plate with coriander, celery, onion shreds and tomatoes. Add salad juice. Mix all well and it is ready to serve.
