Peel the taro and cut into medium chunks

Cut the chicken thigh into medium pieces

Thinly slice the ginger. Chop the shallot. Coarsely chop the basil leafs

Marinate the chicken for 15 minutes

Add taro to deep fry until golden on the edges

Drain off excess oil and set aside

Add ginger, shallot to saute until aromatic

Next, add chicken to brown for 3 minutes

Add water and taro to simmer for 5 minutes on high heat

Add coconut milk and basil leafs
