Step by Step Instructions

Step 1
Clean, pat dry and cut the saury into sections. Coat with corn starch.

Step 2
Mix together Japanese soy sauce, Japanese cooking wine, mirin and light brown sugar.

Step 3
In a pan, add some oil on medium heat. Add saury and sear until golden brown on both sides.

Step 4
Add the sauce and cook until thickened on medium high heat. Ready to serve.
