Takikomi Gohan with Chicken & Burdock Root

Step by Step Instructions

Step 1
Remove the skin and cut the chicken into bite size. Marinate for 15 minutes.

Step 2
Peel the burdock root and cut into shreds. Soak in water to prevent browning.

Step 3
Cut carrot and shitake mushroom into shreds.

Step 4
In medium heat, add some oil to the pan and sauté the vegetables until fragrant.

Step 5
Push the vegetables to the side, add chicken and cook until it all turns white. Stir well with the vegetables.

Step 6
Turn to low heat, add Japanese cooking wine, mirin, sugar, soy sauce and sesame oil, mix well and off the heat.

Step 7
Mix bonito dashi powder with water, stir well.

Step 8
Rinse and drain the rice then place into the rice cooker. Pour in bonito dashi stock, topped with vegetables and chicken and start cooking.

Step 9
When cooking is done, mix all the ingredients together and ready to serve.
