Taiwanese Sesame Oil Chicken

Step 1
Slice ginger with skin on, cut green onion into sections, cut the red dates in half and remove pits, and cut soaked shitake mushrooms in half diagonally.

Step 2
Peel the skin off chicken thighs and cut into pieces.

Step 3
Heat oil in a wok over medium heat, sauté ginger and green onions, add chicken pieces and fry until golden on both sides.

Step 4
Add mushrooms, red dates, rice wine and chicken broth. Add the remaining mushroom water or boiling water until ingredients are covered. Cover the wok with lid and cook for 20 minutes on medium heat.

Step 5
Add sesame oil and white pepper, and mix well.
