Taiwanese Cold Noodles with Sesame Sauce

Step 1
Cut cucumber and carrot into shreds.

Step 2
Cook through the carrot and soybean sprouts in a pot of boiling water, then place into an ice water bath.

Step 3
Cook the noodles and put into an ice water bath. Drained then transfer to plate.

Step 4
Combine the sauce ingredients.

Step 5
Top the noodles with cucumber, carrot and soybean sprouts. Drizzle the sauce and top with the chinese parsley and some sesame. Serve!
