Sweet Fried Shrimp

Step 1
Remove the antenna of shrimp. Cut along the back and devein.

Step 2
Remove the seed of both green and red chili and cut into strips. Cut ginger and leek into thin strips. Juice the lemon and set aside.

Step 3
Coat the shrimp evenly with corn startch. In a frying pan with oil, fry it for 2 minutes until golden brown. Transfer to plate and set aside.

Step 4
With a clean frying pan, add in water, sugar, vinegar, lemon juice and thickening sauce. Over medium low heat, stir well and cook until the sauce is thickened.

Step 5
Return the shrimp into the pan, add ginger, leek, chili and salt and toss it until the ingredients are well coated with the sauce. Ready to serve!
