Cut the pork ribs into pieces, blanch them in boiling water, take them out, wash them clean, and drain well. Set aside.

Step 2
Prepare a frying pan, add oil, ginger, and the ribs, and fry until the ribs are nicely browned.

Add Chinese cooking wine, dark soy sauce, rock sugar, black vinegar, and water. Braise (simmer) for 20 minutes.

Step 4
Season with ground white pepper and salt. Transfer to a serving dish, sprinkle with white sesame and chopped green onions. Serve immediately.
