Sweet and sour beef skewers, wilted cabbage salad with wakame

Wilted cabbage salad with wakame

Step by Step Instructions

Step 1
Soak the wood skewers in cold water. Cut the beef into 2cm cubes.

Step 2
Wash the green peppers and peel the red onions. Cut into 2cm cubes. Fill a medium size pan with cold water, add the sea salt and bring to a boil. Blanch the cubes of vegetables for 2 minutes. Drain and place in cold water to stop the cooking process. Drain and set aside.

Step 3
Wash the cabbage and slice thinly. Put into a large salad bowl. Whisk the soy sauce, rice vinegar and yuzu juice. Add the sesame oil and whisk to make an emulsion. Pour the dressing over the salad and mix well. Add the dried wakame and chill.

Step 4
Mix all of the skewer sauce ingredients and set aside.

Step 5
Alternate beef cubes, green pepper and red onion cubes on the skewers.

Step 6
Heat the oil in a large frying pan and brown the beef on all sides, approx. 6 minutes in total.

Step 7
Pour the sauce into a small pan and bring to a boil to reduce. It should have a syrupy texture. Brush the skewers with the reduction. Sprinkle with sesame seeds and serve with the cabbage salad.
