Summer Zucchini Fritters with Mint & Yogurt Sauce

Step by Step Instructions

Step 1
Wash the zucchinis and cut off both ends. Use a grater and grate the zucchinis. Please the grated zucchinis onto a sieve over a big bowl. Add salt to draw out the water for 10 minutes. Squeeze out all the water from zucchini and pat dry with paper towel.

Step 2
Grate the sweet potato and combine with the zucchinis in a big bowl. Add in flour, grated parmesan cheese, egg and salt and black pepper to taste.

Step 3
In a frying pan over medium heat, add in vegetable oil. Spoon in one tablespoonful of the zucchini mixtures into the frying pan, about 4 -5 spoonfuls at a time. Fry until golden brown on both sides. Drain on paper towel.

Step 4
Mix all the ingredients of the sauce together in a small bowl. Serve with zucchini fritters.
