Stuffed Portobello with Onion and Cheese

Step 1
Preheat the oven to 180°C.Clean the Portobello mushrooms with kitchen paper and remove the stems.

Step 2
Dice the onion and button mushrooms. Cut the bacon into small pieces.

Step 3
In a dry pan, add the bacon and cook until the bacon fat release on a medium high heat.

Step 4
Add the onion and sauté until fragrant.

Step 5
Add the garlic and dice mushrooms until the mushrooms are softened. Season with salt and black pepper.

Step 6
Turn off the heat and add the ketchup and mix well.

Step 7
Season the Portobello mushrooms with salt, black pepper.

Step 8
Fill the Portobello mushrooms with the onion bacon mixture.

Step 9
Drizzle some extra Japanese mayonnaise and sprinkle with mozzarella cheese on top.

Step 10
Place the Portobello mushrooms on the baking tray, cover with foil and bake for 10 minutes.

Step 11
Remove the foil and bake until the cheese is golden brown.

Sprinkle with chopped parsley and ready to serve.
