Stuffed Bamboo Fungus with Mushrooms

Step by Step Instructions

Step 1
Peel and dice the waster chestnut. Soak in water to prevent oxidization.

Step 2
Dice both the abalone mushrooms.

Step 3
Dice the fresh mushrooms.

Step 4
Wash the snow peas and remove both ends.

Step 5
Bring a pot of water to a boil, add mushrooms to blanch for 1 minute. Drain dry.

Step 6
Using the same pot of water, add bamboo fungus to blanch for 1 minute. Drain dry.

Step 7
In a bowl, combine water chestnuts, the abalone mushrooms and fresh mushrooms. Add minced ginger and salt. Mix well.

Step 8
Stuff the mushrooms inside the blanched bamboo fungus. Arrange on a serving plate.

Step 9
Steam over boiling water on high heat for 5 minutes.

Step 10
6. In a saute pan, heat up some oil on high heat. Add ginger, snow peas, and carrots. Seasoning with salt and add a splash of water, quickly saute for 2 minutes.

Step 11
Remove from heat and arrange on the serving plate along with the steamed bamboo fungus (step 5).

In a small bowl, combine the sauce ingredients.

Cook on high heat until sauce thickens.

Pour on top of the stuffed bamboo fungus and vegetables (step 6).
