Strawberry and Cream Scones

For the egg wash
Step by Step Instructions

Step 1
Preheat oven to 185°C.

Step 2
Cut the strawberries into 4.

Step 3
In a big bowl whisk together flour, sugar, baking powder and salt. Shred and mix in the cold butter until the mixture becomes sandy and crumbly. You may use a fork to help you.

Step 4
Add chopped strawberries and lightly toss until berries are coated in flour mixture.

Step 5
Whisk egg and the cream together until mixed together. Slowly add into the flour mixture and use a fork to help you mix the mixture together until a dough is form.

Step 6
Switch to using your hands and gently knead the dough without crushing the strawberries. Make sure the berries a distributed evenly.

Step 7
On a lightly floured surface shape the dough into a flat round that is around 1-1.5 inches thick. Cut it into 8 triangular pieces or you may use any shape cookie cutters you want. Place them on a baking sheet line with parchment paper and brush lightly with egg wash. Sprinkle some sugar on top.

Step 8
Bake in oven for 20-25 minutes. Let cool for 5 minutes before transferring the scones to a cooling rack to cool down further for another 20 minutes.

Step 9
Serve warm with fruit jams and butter of your choice.
