Stir-fried Tiger Prawns with Mango Mayonnaise

End of summer, when the mango is still ripe, will smell the mango incense while walking by the stall. Use it to cook with the shrimp which can feel more refresh, color and flavor also have the summer feeling.

Step 1
Peel and dice the mango

Step 2
Peel, deveined the prawns and leaves the tail on

Step 3
In a mixing bowl, combine the prawns, egg, Chinese cooking wine, salt, white pepper, 1/3 of the potato starch and marinate for 10 minutes

Step 4
In a large bowl, whisk together the mayonnaise, lemon juice, honey and Dijon mustard

Step 5
Dredge the prawns with the remaining potato starch

Step 6
In a pan, add enough oil for frying. Add the prawns and cook until golden brown and crispy

Step 7
Drain off the excess oil and place together with the mayonnaise

Add the mango and toss well
